I have a bit of a problem with paypal, I want to configure it so that all the customer does is imput the email address after selecting paypal as payment option. We have a lot of rotating stock so it's not out of ordinary for an item to be out of stock as the customer is ordering it. I was thinking of using additional checkout data pro and have the customers use COD as an option and put in their email in the box. Is there a much easier way to do this?
If you are using the built in inventory system, when the last remaining item is put in someone's basket, that item will no longer be available to anybody else (add to basket button disappears). This is assuming you have your inventory system setup to do that. Thus, someone can't buy a not in-stock item.

That's also part of the problem we lack in terms of inventory management, the company is very old so it's another project that will have to be tackled later on.

Are you trying to compensate for items of limited stock which you are also selling in a retail store?

What I am trying to do is finding a way at checkout to only ask for paypal customers email. After we get the order and made sure everything is in stock or out of stock we can send them the request (adjusted or not) through paypal. It's a wholesale store we just have a lot of rotating items.
So you just want a way to invoice them if the items are available. You could use the Purchase Order Plus module at http://www.emporiumplus.com/go/wcw/PROD/1AA/1AA00057
That module lets you change the prompt they see in the drop down and the prompt next to the text input on the next page. Instead of purchase order you could have PayPal in the drop down and then Your PayPal ID (email) next to the input. You would retrieve that ID by going to the order edit screen.
