What is the most graceful way to process transactions for subscription based (ie monthly) products? Can a customer change or cancel their subscription in their miva customer account?

MIVA itself has nothing to do with subscription accounts.

This is a function of your payment gateway, not MIVA Merchant.

using the pay pal module, how then to add a cancel subscription button to the customers transaction record in their account?

You cannot.

Only the customer can through their PayPal account history:
