I am moving server again and I was wondering what is the best approach?
I was thinking about closing the store. Dump the database via shell. Go to the new server and restore the database. Then I'll edit the database to change all the path.
What do you think?

MediaTemple should be able to facilitate the move to a new server without you having to do a thing.

Miva Merchant doesn't know about any paths internal to the server, only thing it has settings for is what shows in the URL, so as long as its script files end up in an equivalent location on the new server, it will 'just work'.

If you are moving to a host that doesn't make sure everything is up and running for you - then you are moving to the wrong host.

This is an internal server move which makes things even worse.
