I don't see an example on the page you linked to, but yes, it's doable. Attributes can have costs associated with them.
I'm probably just not seeing it. Can you give some more info about what your asking about?

The idea is for the user to be able to click on a flavor, and then the price of that flavor will be calculated with how long the person wants to stay in the club and how often they'll receive coffee. Is that too complex for Miva?

I don't see the price changing depending on how long I choose to receive the coffee. From what I understand is that choice only decides how often the reccurring payment occurs. I do see the price changing depending on the bag size.

This is not a problem, stock MIVA Merchant can do this fine.

Your example does not show product prices changing based on flavor though...?? The Coffee Club process shown would take a lot of customization, stock MIVA Merchant would not be able to pull this off.
Doable, IMO though, This method would take either some custom coding and/or static pages with hard coded links. In all, probably a nightmare to maintain in Merchant version 4 or 5.

if you click on a flavor, it brings up a price. if you go back and check off a different flavor instead, the price shoukd be different (if you find one with a diffeent price).

If you want the feature to work exactly as shown on your example, it will take a lot of custom coding. You would also lose the ability to alter these products in the MIVA Merchant Administration.
If all you are worried about is the price updating as they select different flavors, say using a dropdown list, Sebenza's Product Template Manager (http://www.sebenza.com/products/SS-PRODTEMPLATES5.html) would be a good way to go. It allows for the price to be automatically updated as the customer selects different attributes.
Keep in mind that the stock MIVA Merchant Product setup will be a one page deal. (not 3 as your example shows) So you would probably want to set it up something like this:
Coffee Club Membership
Price: $0.00 (automatically updates as attributes are selected using Sebenza's Product Template Manager)
Bag Size: (Radio Buttons)
1lb. Bag ($12.99)
1/2 lb. Bag ($7.99)
Flavors: (Dropdown List)
Espresso ($4.50)
Mocha ($2.50)
Decaf ($0.00)
Grind: (Dropdown List)
Whole Bean ($0.00)
French Press ($0.00)
Quantity: (this will be the number of bags they want to order)
Like I stated before, everything is done on one page and not in a three step process. If they want to add another flavor, they would just need to add this product to the basket again. Fast, simple and easy for your customers.

Off topic, but: I definately don't like that they don't tell you the coffee is different prices (well I didn't read anything, I just started clicking). But knowing prices is a BIG part of shopping -- I might sacrifice taste if I could save a few bucks.

High end coffee drinkers don't care about price... it is like crack! :)
