New Account Creation Email Notification

Is there a setting somewhere in MM5 that can be set so that an email notification is sent (to me), when a new customer signs up for an account on my website?

No. But you can get a 3rd party module to do it. The Mail Manager at
http://www.emporiumplus.com/go/wcw/PROD/1AAM5/1AA00089
does it. It also can replace those bland text emails that you use for your customer and merchant confirmation emails with html formatted emails. The template layout of the emails lets you redesign how your emails look.

Thanks guys. I'll look into each of these modules and see if either, or both might be worth purchasing. That'll be the easy part, the hard part is figuring out how to install these things when you have next to NIL experience in this area.

Most third party modules come with installation instructions bundled in the downloadable .zip file.

Good idea to always read the included documentation before installing any module.
