If I have a product created and basically want to use that product as the basis for another product I want to create- how do I copy it?

There's no provision for that inside the MM admin interface. At best you can keep two windows open - one for viewing the first product and copying the data, and second for creating a new product and pasting the data into. Just make sure to do all updates in ONE of these screens, not both, as there's a lot more going on in the background in admin when you hit the UPDATE button (all tabs on the screen get updated, rather than just the one you are looking at).

Maybe you can take advantage of the Product import feature under Utils. This way you can set up all your prods off line in a database or a spreadsheet. Miva's do***entation covers how to do this.
That's the free method.
There are products like Storeman (http://http://www.mivacentral.com/IDS/?product=PM-SMPRO) that will allow a nice interface to manage it all a whole bunch easier.

What Scot is referring to is one of StoreMan's many features. Product Templates. Product Templates can be used to create many products that are exactly the same as the product you select to be your template (after you change the Product Code of course), including Category Assignments, Related Product, Attributes and Options.
(use Scots's link above as I can't edit my sig line.)
