My products have about 50 attributes each (it is more like an application process). I am hoping to split my "check out" page into 5 or six pages so that customers dont get discouraged by too many fields on one page. I am thinking that I can build a form and pass the variables across each page then load the values into hidden product attributes.
Is this the best way to go about this, is there a module that may help?

Well, it all depends on how you plan on "processing" the application, and how much automation you need. For example, you could probably just build a series of new pages collecting the data has you go, and then populate a single product "attribute" (think TextArea field) with the collected data...messy, but pretty simple to implement. In other words, i think you need to explain the ENTIRE process a bit more...as collecting data isn't even a 10th of the issue when it comes to managing data.

Oh that is a good point. I would certainly hate to manage a single column database. LOL. Let's assume I'd like to mine the data and even share it across mulitple applications.
