Just wondering if there is a way using miva basic set up to attach a certain set of shipping prices depending on category

No, not out of the box.

Since you can add Products to many Categories there is no easy way to know which Category a Product was ordered from.

There may be a workaround using a Third Party Module. If there is, I am sure someone will chime in.

lets you set a storewide cost for each product. Then you can override that by setting a cost for each product by category. You can further override that setting down to the product level.

cool, well to turn it down a notch, is it possible to attach only certain shipping prices to each product, ie if you have product 1 and product 2. product 1 would only show say shipping 1a and 1b and product 2 would only show shipping 2a and 2b???

So if both were in the cart you would have no shipping options? You might want to take a look at the CBS shipping supermod at mivacentral.com and see if it does what you need.
